How to read the numbers
Write down what you did, not what you meant to do. A log is how the next batch gets better.
Before
Check yeast, hops and grain against the recipe.
Sanitize the vessel and note the time.
During
Record mash temperature, time and pH.
Record boil gravity, hop additions and times.
Cool, aerate and pitch; write down the temperature.
After
Update the batch row with brewed date, vessel and ready date.
Log starting gravity in the batch page.
Clean the kettle and fermenter the same day.
Filling
Clean and sanitize the keg; purge with carbon dioxide.
Fill, label with the batch and date, and press Fill a keg on the batch.
Store in the cooler at the right temperature.
Movement
Update Where whenever a keg moves: tap, customer, back dock.
Check empties weekly; chase any keg out for more than six weeks.
Quality
Taste each batch at packaging and again a week later. Write the notes in the batch page.
Schedule
Steps
Mark the tap as Cleaning.
Flush with water, circulate cleaner for fifteen minutes, rinse until neutral.
Taste the first pour to confirm no off flavors.
Press Back to pouring, update Line cleaned and set the next clean date.
Bad lines make good beer taste bad. This is the cheapest quality control in the building.
Taking an order
Confirm the account, the beers, kegs and delivery window.
Check availability against kegs in the cooler.
Delivering
Load kegs against the order list and note keg numbers.
Collect empties and record them.
Press Log delivery and update the keg locations.
Follow-up
Call each account every month; ask what is selling and what they want next.
